Hen Smoked Sausage Audouille Tasso Gumbo

You can make this spicy or not...we in the south like it spicy..this is great with served on rice with a side dish of potato salad or yams ..you will love this....
Ingredients:
one large pot of cooked rice
large soup / gumbo pot
1 large hen
1lb of sausage cut up into slices
1lb of audouille cut up into slices
1 lb of tasso cut up into small pieces
1 small yellow or white onion
1 bunch of green onions
1 jar savoy roux ( or make your own)
2 tlbsp of oil
3 qts of water (more less)( meaning you can put more or less)
seasoning ,,,salt , pepper , tony's or slap yo mama..what you like in this type of seasoning...
Directions:
1. In your large pot , on med to high heat
2. put your oil then add your cut up hen
3. brown the hen then take out.(takes about 15 to 20 minutes)
4. take your tasso, smoked sausage, audouille and put into the same
5. large pot and let it brown..about 15 minutes...
6. then add yellow/white onions let saute' until they are clear
7. add 1/2 the jar of roux and saute' this with the onions..
8. adding about 2 cups of water let the roux soften to a liquid..
9. then add your smoked sausage and tasso and audouille..let this
10. cook for about 15 minutes then add hen and 6 cups of water.
11. stirring letting this boil......keep adding enough water till you have it where it doesn't look like a stew but not as thin as a gravey.
12. add your green onions and parsley. let all cook for about 2 hours or until the hen is tender.
13. Have bowls ready with rice and use a laddle to put your gumbo into the bowl...........
14. serve as a side dish with yams or potato salad ...
