Adapted from Barbecue Bible Sauces, Rubs and Marinades.
Ingredients:
1 cucumber, peeled, seeded, and cut into 1/4-inch dice
1 large tomato, peeled, seeded and cut into 1/4-inch dice (or 2 medium)
1/2 medium red onion, cut into 1/4-inch dice
1/2 cup chopped flat leaf parsley
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1/2 teaspoon dried oregano
1/2 teaspoon coarse salt (to taste)
1/2 teaspoon pepper (to taste)
Directions:
1. Combine cucumber, tomato, onion and parsley in a mixing bowl.
2. Add remaining ingredients and toss to mix.
3. Best if eaten within 2 hours of making.
