Hearty Wheat and Oat Pancakes

This wholesome breakfast provides a double dose of whole grains and heart-healthy fiber.
Ingredients:
1 1/4 cups 1% low-fat milk
1/2 cup quick-cooking oats
2 tablespoons dark brown sugar
1 tablespoon vegetable oil
1 large egg
3/4 cup all-purpose flour
1/4 cup whole wheat flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
cooking spray
Directions:
1. Combine first 4 ingredients in a bowl; let stand 10 minutes. Add egg, and beat well.
2. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, baking powder, and salt; stir with a whisk. Add oat mixture to flour mixture; stir until blended.
3. Spoon about 1/4 cup batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked.
