Hearty Vegetable Soup

  1. Chop all the vegetables
  2. Fry the onion gently in the oil with the bacon until soft
  3. Add all the vegetables and fry gently for 10 minutes or until softened
  4. Add chicken stock and simmer for 30 mins
  5. Blaend with a hand blender and serve with crusty wholemeal bread
