Hearty Meat Sauce over Pearled Barley (Diabetic)

Comforting and yummy! Big Italian flavor easy enough for any night of the week. The barley has a low Glycemic Index yet similar chewy texture compared to pasta.
Ingredients:
1 lb ground turkey breast
2 (28 ounce) cans prepared spaghetti sauce
1 (15 ounce) can diced tomatoes, undrained
1 tablespoon italian seasoning
1 small onion, chopped
2 garlic cloves, minced (to taste)
1 (16 ounce) package frozen chopped spinach
1 cup pearl barley (dry)
1 teaspoon chicken bouillon
parmesan cheese (to taste)
Directions:
1. In a medium sauce pan, bring chicken bouillon and 2.5 c of water to a boil. Add barley and cook on low, covered, for 45 minutes. Barley should be tender but still chewy with a firm bite.
2. Meanwhile, in a large stock pot combine: turkey, spaghetti sauce, tomatoes, Italian seasoning, onion and garlic. Stir until turkey is well-distributed.
3. Simmer sauce over medium heat until turkey is cooked, about 30 minutes.
4. Add spinach and simmer an additional 10 minutes to heat.
5. Serve meat sauce over barley and top with Parmesan cheese.
