Hearty Meat Pasta Sauce

a few modifications on my Mom's pasta sauce, this is hearty good tomato sauce
Ingredients:
1 lb lean ground beef
1 lb ground turkey
2 tablespoons divided olive oil
2 cups celery, chopped
2 cups onions, chopped
6 ounces mushrooms
3 minced garlic cloves
2 carrots, chopped
2 red bell peppers, chopped
2 scotch bonnet peppers, chopped
1 tablespoon fresh thyme
1 tablespoon fresh rosemary
1 tablespoon fresh oregano
2 tablespoons fresh basil
1 tablespoon ground pepper, divided
1 teaspoon kosher salt, divided
1 tablespoon celery seed
2 bay leaves
2 (29 ounce) cans tomato sauce
2 (6 ounce) cans tomato paste
2 (28 ounce) cans diced tomatoes
Directions:
1. In a large hot sauce pan, add 1 Tbsp of Olive oil, and brown ground beef and turkey, season lightly with salt and pepper.
2. Put aside once browned, strain out any fat.
3. Add 1 Tbsp of olive oil to large hot sauce pan. Add onion, celery, carrot, garlic, mushrooms, red peppers, haberno peppers. Stir and sautee for 2-3 minutes, until onions an celery begin to brown.
4. Add tyme, rosemary, oregano, celery seed, salt and pepper. Mix well to incorperate all herbs and spices.
5. Add browned meat, stirring well.
6. Add the tomato sauce, diced tomatoes and paste. Stir to completely mix.
7. Add Basil and Bay leaves.
8. Bring to a boil on medium high heat.
9. Reduce to a simmer for 1-2 hours.
