Hearty lentil Soup

I use a very large stock pot . Adding all the ingredients before I start cooking. With the idea more is better. I will have it one night and then freeze it. It is just as good.
Ingredients:
2 1/2 cups lentils
1 meaty ham bone or 1 hock
4 large sausage
2 cups chopped onions
1 cup chopped celery
2 large carrots, chopped
2 cloves garlic, chopped
2 (16 ounce) cans stewed tomatoes, crushed
2 bay leaves
1 tablespoon fresh thyme, less if dried
1/2 teaspoon black pepper
1/2 cup parsley
2 tablespoons cider vinegar
salt, if needed
10 cups water
Directions:
1. Put all the ingredients into a large soup pot make sure you cut up the sausage.
2. Bring it to a full boil and then let it simmer for about 4 hours or until meat is tender and falls off the bone.
