Hearty Brown Rice And Bean Pilaf

This is a great tasting rice dish. It's from Taste of Life cookbook. Enjoy!
Ingredients:
4 tbs. butter
1 lb. red potatoes, cut into 1/4 inch thick slices
3 green onions, cut into 1- inch pieces
2 carrots, peeled and diced
3 3/4 cups water
1/2 tsp salt
1/8 tsp pepper
2 vegetable bouillon cubes
1 1/2 cup brown rice
1 can (15 to 19 oz) beans: kidney or pinto
1 cup frozen peas
1/4 cup grated parmesan, optional
1/2 cup shredded mozzarella, optional
1/3 cup sliced almonds, optional
Directions:
1. In a large skillet over medium-high heat, melt butter.
2. Cook potato slices, green onions, and carrots, stirring frequently until lightly browned, about 5 minutes.
3. Add water, salt, pepper, and bouillon. Heat to boiling.
4. Add rice, heat to boiling
5. Reduce heat to low, cover and simmer 35 minutes.
6. Stir once, midway through cooking.
7. Into skillet mixture, stir beans, peas and cheeses and almonds.
8. Cook, stirring gently, until beans and peas are heated through and cheese melts.
