Hearty Beef Enchiladas

Ingredients:

Directions:

  1. Using a large saucepan, cook beef and onions together until meat is cooked and onions tender.
  2. Stir in the beans, 2/3 cup enchilada sauce and 2 tablespoons salsa.
  3. Set aside.
  4. Preheat oven to 350 degrees F.
  5. In a skillet, heat 1/4 vegetable oil.
  6. Dip each tortilla in oil for 3 seconds, just until limp.
  7. Drain tortillas on paper towels.
  8. Top each tortilla with 2/3 cup beef mixture.
  9. Roll and place seam-side down in baking dish.
  10. Drizzle with remaining enchilada sauce and salsa.
  11. Sprinkle with cheese and olives.
  12. Bake, uncovered, for 20 to 25 minutes OR until bubbly.
