This recipe was my grandmothers recipe we use to eat it out of her little bean pots when we were children. It is really good served with a crusty Italian bread, small salad. I still have this dish but serve it in a 2 qt. Read more . baking dish. My hole family loves this dish I haven't changed any thing it is exactly like she fixed it.
Ingredients:
1 tbsp. olive oil
1-1/2 lb. stew beef
1 tsp. minced garlic
1 (16-oz.) can navy beans
1 (4-oz.) can chopped mild green chilies
1-1/2 cups water
1 (10-oz.) can tomatoes with green chilies
1 medium onion, chopped
Directions:
1. Preheat the oven to 350 degrees.
2. Heat olive oil in a large skillet over medium high heat until hot. Sauté beef and garlic in hot oil until beef is browned, about 6 minutes. Set aside.
3. Spoon the beans into 8 individual ban pots or a 2 qt. baking dish.
4. Spread green chilies over beans. Pour water and tomatoes with green chilies over the green chilies.
5. Sprinkle onion over tomatoes with green chilies. Top with sautéed beef. Bake covered, for 2 hours. Serve hot
