Hearts Of Palm Dip/filling

My mom used to make this for a lot of parties for our Brazilian friends. You can find variations of this dish just about everywhere you go in Brazil. You can find Hearts of Palm (canned) at any grocery store now-a-days.
Ingredients:
2 tbsp. olive oil
1 medium size onion (about 1 cup) – diced small
3 garlic cloves (about 1 heaping tbsp) – finely chopped
3 small sized ripe tomatoes (about 1 cup) – diced small
2 tbsp flat-leaf (italian) parsley – finely chopped
salt & pepper to taste
1 14 oz. can hearts of palm - diced small – retain liquid from can – add enough water to make 1 cup of liquid ** note: they should be soft enough to cut, do not use any which are hard &/or woody
2 heaping tbsp all purpose flour – add to liquid, mix well & put aside
Directions:
1. - Heat oil in medium sauce pan at medium-high heat
2. - Add onions & allow to sauté for a minute
3. - Add garlic & mix together with onions until onions are soft & transparent
4. - Add salt & pepper to season (optional)
5. - Add tomatoes & let cook for about 1 minute
6. - Add parsley & stir a few times
7. - Add liquid/flour, bring to slow boil & allow to thicken a couple of minutes (if it’s too thick add a little more water), it should look like thickened cream
8. - Add the diced hearts of palm. Mix well & reduce heat to simmer.
9. - Allow to simmer 15-30 seconds before removing from heat & allowing to cool to room temperature
10. You can refrigerate for 1 week or freeze until you are ready to use it. There are many ways to use this filling/dip.
11. - Fill your favorite dough for hot pockets or turnovers (with puff pastry)
12. - Fill some Won-Ton skins & deep fry
13. - Use it as a pie filling w/ crust on top (make those very small pies for parties). Pies can be frozen & re-baked later.
14. - Use as a dip for corn chips or toasted crackers/pita
15. - Fill Tostito Scoops!® chips & top with halved green pimento olives (or your favorite garnish)
16. - Add to a garden salad as a topper or in place of dressing
