Heart-Warming Baked Oatmeal

A wonderful old Amish recipe. This recipe has versatility. You can make it with egg whites or egg substitute. Soy milk or rice milk can even be used. It can be tailored to most dietary needs, without sacrificing flavor.
Ingredients:
3 cups old-fashioned oatmeal
1/2 cup margarine (1 stick) or 1/2 cup butter (1 stick)
1/4 cup packed brown sugar (more,if desired)
2 eggs
2 teaspoons baking powder
1 teaspoon salt
2 cups milk
dried fruit (such as raisins, apples, cherries or cranberries) (optional) or chopped nuts (optional)
Directions:
1. Melt margarine (butter) and cool slightly.
2. Meanwhile, mix together the oatmeal, brown sugar, baking powder, and salt in a large bowl. In a small bowl, mix the eggs, milk, and melted margarine (butter). Stir into the dry mixture.
3. Bake in a buttered 13x9x2-inch baking pan at 350 - 375 degrees for approximately 30 minutes.
4. OPTIONAL: Add 1/2 cup each chopped dried fruit and/or nuts of your choice before baking. Or, you could also bake without the fruit/nuts in the mix, serving it with a dollop of vanilla yogurt with the chopped fruit and nuts sprinkled on top.
