Heart Attack Cauliflower Grits

We are not low carbers, but boy are these good. Recipe adapted from 500 Low-Carb Recipes . We adore these with Shrimp Jambalaya - see recipe. Unsure yield. You could add some garlic if you like.
Ingredients:
1 large head cauliflower
1/3 cup milk
6 ounces cream cheese
1 tablespoon butter
1 cup cheddar cheese, grated
1 cup parmesan cheese
salt
1 teaspoon pepper
Directions:
1. Simmer the cauliflower in water with the milk added in (it will keep the cauliflower from turning color). When very tender, drain well.
2. With a hand masher, smash the cauliflower while mixing in the cream cheese, butter, and cheeses to the cauliflower. Salt and pepper to taste.
