Healthy Zucchini Bread

This bread is great for you! There is just a little sugar and no oil or butter. Not only that, it tastes great too. It is perfect if you are watching your weight, or for feeding toddlers and kids. You can use fresh or frozen zucchini. You can add in 1 cup dried fruit if you want too. Raisins are wonderful in it.
Ingredients:
3 eggs
1 cup unsweetened applesauce
1 cup sugar
1 teaspoon vanilla
1 1/4 cups white flour
1/2 cup wheat flour
1/4 cup wheat germ
2 1/2 cups grated zucchini
1 teaspoon cinnamon
1 1/2 teaspoons baking soda
1 teaspoon salt
Directions:
1. Beat the eggs until foamy.
2. Add in the applesauce, sugar, and vanilla. Mix well.
3. Stir in zucchini.
4. Combine flours, wheat germ, cinnamon, baking soda, and salt.
5. Combine both the dry mixture and the egg mixture.
6. Bake at 325 for 1 hour.
