Healthy Yummy Banana Bread

No white flour, refined sugar, or eggs. Good toasted for a snack for you and the kids.
Ingredients:
1 1/2 cups whole wheat pastry flour
2 tablespoons wheat germ
2 tablespoons ground flax seeds
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup toasted pecans (optional)
1/4 cup unsweetened applesauce
1/2 cup maple syrup
1 tablespoon vanilla
1 cup very ripe banana, mashed
1 tablespoon water
Directions:
1. Mix dry ingredients, and sift.
2. Mix remaining ingredients, and incorperate into the dry mixture.
3. The batter is thick. Place in a 8 1/2 x 4 loaf pan.
4. Bake at 350 for 35 - 40 minutes or until a toothpick inserted in the center comes out clean.
5. Cool before cutting.
