Original recipe called for 3/4 cup of mayo and 1 avocado; I eliminated the avocado and decreased the mayo to 1/3 cup
Ingredients:
2 tablespoons lemon juice, divided
2 cups chicken breast, cubed
2 cups green grapes, halved
1 medium tart apple, chopped
1 cup chopped celery
1/3 cup mayonnaise
1/4 cup chopped pecans, toasted
1/2 teaspoon ground ginger
1 lettuce leaves, optional
Directions:
1. In a large bowl, combine the chicken, grapes, apple, celery, mayonnaise, walnuts, ginger and remaining lemon juice.
2. Serve on lettuce-lined plates if desired.
3. You can add 1 avocado but add it in calorie count separately
4. Yield: 5 servings.
