A standard recipe for waffles. You may add flaxseeds to the mixture for extra fiber. The recipe will make eight 6 waffles, or 4 larger waffles
Ingredients:
1 1/4 cup white flour
1/2 cup whole wheat flour
2 tsp baking powder
1/2 tsp salt
1 tblsp sugar
2 eggs, separated
3 tblsp melted butter
1 1/2 cups milk
Directions:
1. Sift the dry ingredients into a large bowl.
2. Separate the eggs into a bowl large enough to hold all the moist & liquid ingredients.
3. Melt the butter, cool slightly and beat the with the egg yolks and milk.
4. In a separate bowl, beat the egg whites with the sugar until stiff.
5. Quickly pour the liquid ingredients into the bowl with the flour mixture. Do not beat this batter.
6. Fold in the egg whites.
7. Pour the batter evenlyh onto the pre-heated waffle iron.
8. Cook according to the instructions for your waffle iron
