Healthy low sugar banana bread, modified from the Healthy Vegan Banana Bread on RecipeZaar, #106912. Not very sweet, but sweet enough, I think. Overripe bananas are key. When your bananas start to go brown, save them in the fridge to make this.
Ingredients:
---dry ingredients
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
---wet ingredients
1 1/2 cups mashed overripe bananas (about 2 large bananas)
3 oz. soft tofu
2 tablespoons maple syrup
2 tablespoons cooking oil
2 teaspoons vanilla extract
1/3 cup chopped nuts
1/3 cup raisins (optional)
Directions:
1. Preheat oven to 350.
2. Mix dry ingredients together.
3. In a medium bowl, mash banana with a fork.
4. Add the rest of the wet ingredients with the banana, mix.
5. Pour liquid ingredients into the dry ingredients.
6. Add nuts or raisins.
7. Pour mixture into loaf pan and bake for about 50 minutes.
