I made this banana bread and couldn't believe how great it tasted! It doesn't even have sugar, eggs or butter! If you're looking for a healthy, low fat vegan loaf this is the right recipe to look at!
Ingredients:
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 cups mashed bananas
6 tablespoons apple juice concentrate
2 tablespoons cooking oil
2 teaspoons vanilla extract
1/3 cup chopped nuts
1/3 cup raisins (optional)
Directions:
1. Preheat oven to 350.
2. Mix dry ingredients together.
3. In a medium bowl, mash banana with a fork.
4. Add the rest of the wet ingredients with the banana, mix.
5. Pour liquid ingredients into the dry ingredients.
6. Add nuts or raisins.
7. Pour mixture into loaf pan and bake for about 50 minutes.
