this may look bland, but really tastes fine! leaving out all the cream etc makes it virtually calorie free and a great way of filling up with out going over your points allocation. i make soups out of all vege (mainly broccoli, leeks, pumpkin , zucchini, cauliflower and combiniations thereof) freeze them and take them ot work for lunch with a wholegrain roll. works a charm!
Ingredients:
400 g pumpkin
1 onion
2 cloves garlic
Directions:
1. sautee onions and garlic
2. add pumpkin (or other vege)
3. sautee briefly and season
4. add water (enough to come to abobout 2 below where the veges sit)
5. cook untill veges are soft
6. blend
