Healthy Salmon-stuffed Mushrooms

A low-carb, healthy appetizer...
Ingredients:
24 large mushrooms
2 tbsp lemon juice
1 tbsp olive oil
1/2 finely chopped onion
1/2 cup finely chopped red bell pepper
4 cloves garlic, minced
1 3-oz pkg low-fat cream cheese, softened
1/4 cup low-fat sour cream
1 6-oz can red salmon, drained
1/4 cup grated romano cheese
1 tbsp chopped, fresh dill
Directions:
1. preheat oven to 375*F
2. rem mushrooms
3. remove the stem ends from mushrooms
4. brush caps with lemon juice and set aside
5. finely chop stem ends
6. In saucepan, heat olive oil over medium flame
7. add onion, bell pepper, garlic, and mushrooms stems
8. cook & stir until tender
9. Remove from heat and place in bowl
10. add the cream cheese and sour cream to the vegetables and mix well.
11. add salmon, Romano cheese, and dill.
12. Mix well.
13. Stuff the mixture into the mushroom caps
14. bake 20 - 30 minutes
15. Allow to cool 10 minutes before serving.
