Vegetables can be added or subtracted according to taste and/or availability.
Ingredients:
8 ounces pasta, any kind
2 cups broccoli, raw or lightly steamed
2 cups spinach, torn
1/2 cup black olives, whole or sliced
1 small cucumber, sliced
1/2 small onion, chopped
1 red bell pepper, sliced
1 teaspoon black pepper, to taste
3/4-1 cup red wine and vinegar salad dressing or 3/4-1 cup balsamic vinaigrette or 3/4-1 cup italian salad dressing
Directions:
1. prepare pasta.
2. combine all ingredients into large bowl.
3. add dressing.
4. chill.
5. enjoy.
