Healthy Oatmeal Raisin Cookies

I gave this recipe a makeover when I was struggling with my blood sugar during pregnancy. These cookies are not very sweet, but are great for when you just need a little something.
Ingredients:
1/4 cup applesauce
1/4 cup canola oil
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup egg substitute
1/2 teaspoon vanilla
1 cup whole wheat flour
1 1/4 cups old fashioned oats
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chopped walnuts
3/4 cup raisins
Directions:
1. Mix applesauce, oil, and sugar. Add egg and vanilla, mix well.
2. In a separate bowl, combine the flour, oats, salt, baking powder, and baking soda.
3. Combine wet and dry ingredients. Stir in the raisins and nuts.
4. Drop spoonfuls onto greased cookie sheets. Flatten each cookie. Bake at 375 degrees for 12 minutes or until lightly browned. Cool on a wire rack.
