Excellent healthy muffin.
Ingredients:
1 cup whole wheat flour
1/4 cup all-purpose flour
1/4 cup skim milk powder
1 teaspoon baking powder
1/3 cup vegetable oil
1/2 cup applesauce
1/2 cup milk
1/4 cup egg white
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Directions:
1. Combine all dry ingredients.
2. Mix oil, apple sauce, milk, apple juice and egg whites together.
3. Add wet to dry ingredients, and mix just until all combined.
4. Pour into muffin tins, greased with cooking spray.
5. Bake at 375°F.
