Ingredients:
1/2 cup instant oats
1/2 cup milk
1/4 cup whole wheat flour
1/4 cup white flour
1 tbsp flax
1/2 tsp baking powder
1/4 tsp baking soda
1/4 cup brown sugar
1/4 cup apple sauce
1/2 egg
1/8 cup chocolate chips
1/8 cup strawberries, chopped
1/8 cup walnuts, chopped
Directions:
1. Place oats in a bowl with the milk and let it sit for 10 to 20 minutes
2. Preheat the oven to 375 degrees f and prepare your muffin pan
3. In a large bowl, stir the flour, baking powder, baking soda and brown sugar. Stir in the oat and milk mixture, applesauce and egg; mix well
4. Pour into prepared muffin pan and bake for 12-15 minutes or until golden
