Healthy Mediteranean Salad

I love making this Salad on a Saturday afternoon. It is quick, easy and really healthy. Learned to make it at a Health Spa. It is quite filling - if you stick to all the ingredients. Enjoy!
Ingredients:
rub the inside of a wooden bowl with a garlic clove (thats cut in half)
line the bowl with a bed of lettuce (use your favourite - i like iceberg)
place on top of the lettuce
4 small tomatoes – cut in quarters
1 cup of shredded cooked green beans
6-8 small potatoes, cooked in skin and cut in half
2 hard-boiled eggs cut in quarters (optional)
1 green pepper cut in thin strips
1 medium onion cut in thin slices.
10-12 calamata olives (i like more so add as many as you like)
250g feta cheese, cubed or crumbled
Directions:
1. Squeeze half a lemon over salad just before serving. (Or use your favourite salad dressing if you prefer. I’ve used anything from Caesar dressing, Thousand Island or French)
2. Serve with Fresh Garlic & Wholewheat Bread.
