I got this recipe from a Betty Crocker Cookies Brownies & Bars booklet. They are very healthy, moist and tasty. They don't spread, so be sure to flatten them before cooking. I altered it a little bit.
Ingredients:
1 cup sugar or 1 cup sucanat
1 cup mashed cooked sweet potato
1/2 cup margarine, melted
1 egg
2 cups oatmeal
1 cup whole wheat flour or 1 cup all-purpose flour
1/4 cup ground flax seed meal
3 tablespoons wheat germ
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1 large all-purpose apple, finely chopped
Directions:
1. Heat oven to 350°F.
2. Spray cookies sheet with non-stick cooking spray (or use parchment paper).
3. Beat sugar, sweet potatoes, margarine and egg in large bowl on medium speed until smooth. Stir in remaining ingredients.
4. Drop by tablespoonfuls about 2 inches apart onto parchment lined cookie sheet. Bake about 12 minutes or until no indentation remains when touched.
5. Cool slightly; remove from cookie sheet and cool on wire rack.
