Cold edamame salad
Ingredients:
5 tbsp red wine vinegar
2 tbsp olive oil
1/2 cup lime juice
1/3 cup parsley
3/4 tsp salt
2 garlic cloves
16 ounce edamame
3 cups corn
1 red pepper, diced
1/2 cup cucumber, diced
15 ounce black beans
Directions:
1. Whisk together vinegar, olive oil, lime juice, parsley, salt and cloves
2. Stir in edamame, corn, red pepper, cucumber and rinsed black beans.
3. Let marinate 2 hours
