Ingredients:
16 oz lite coconut milk
2 chicken breast
2 tbls brown sugar
1 cup green peas
1 cup bamboo shoots
2 tbls curry paste
1 cup brown rice
Directions:
1. Cook Rice as normal
2. Brown Chicken in pan
3. Simmer Coconut milk
4. blend in curry paste
5. add 1 cup green peas
6. blend in brown sugar
7. 1 tsp of fish sauce
8. simmer 15 min
9. Serve over brown rice
