Healthy Crock Pot Taco Soup

Lots of additions/subtractions to suit my taste and make it lower calorie. What is great about this recipe is you can add more veggies to make it even more hearty and not bulk up the calories - You can add more tomatoes, olives, more beans for protein, carrots, more corn etcetera. Experiment and enjoy. *I try to utilize low sodium in all canned goods, its better for you. Lastly, it adds calories, but you can top with sour cream, green onions and shredded sharp cheddar. MMmmm.
Ingredients:
1 lb turkey sausage
1 lb ground chicken
2 cups diced onions (i use white)
1 (15 1/2 ounce) can chicken broth (or beef)
1 (15 1/2 ounce) can pinto beans, drained
1 (15 1/2 ounce) can black beans, drained
1 (15 1/4 ounce) can whole kernel corn, drained
3 tablespoons garlic, chopped
1 (14 1/2 ounce) can diced tomatoes (i use the chipotle or spicy version)
1 (14 1/2 ounce) can rotel (tomatoes and green chilies, diced)
1 (4 ounce) can diced green chilies
0.5 (4 ounce) can jalapenos, diced
2 (1 1/4 ounce) packages taco seasoning mix
2 (1 ounce) packages ranch dressing mix
Directions:
1. Brown the ground meat in 2 T extra virgin olive oil.
2. Add everything to the Crock Pot, heat on low for 6 hours, stirring occasionally.
3. Enjoy!
