My favorite cookie is found at our local Flying Star restaurant. It's packed full of dried fruits and runs about $2 per cookie. I thought I'd try my hand at a healthy (and less expensive) version.
Ingredients:
1/2 cup butter or 1/2 cup margarine
1/2 cup low-fat yogurt
1 cup brown sugar
1/2 cup sucanat
2 eggs
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
3 cups oats
1 cup dried cranberries
1 cup chopped dried apricot
1 cup sweetened flaked coconut
1 cup chopped walnuts
Directions:
1. Preheat oven to 350 degrees.
2. Beat butter, yogurt, sugar and sucanat together.
3. Mix in eggs.
4. Slowly add flours, and baking soda.
5. By hand mix in remaining ingredients.
6. Drop by rounded tablespoon onto ungreased cookie sheet.
7. Bake 11-12 minutes.
8. Remove from sheet promptly and let cool on cookie rack.
