Healthy Cottage Cheese Muffins

With little oil and sugar and plenty of cottage cheese. This recipe only makes 6 small muffins, so double/triple/quadruple it as you like.
Ingredients:
1/2 cup flour (any kind will do)
1/4 teaspoon salt
1 teaspoon baking powder
1 egg, beaten
1/2 cup cottage cheese, low-fat
1 tablespoon vegetable oil
1 tablespoon honey
1 tablespoon sugar (as much or little as you desire)
Directions:
1. Preheat oven to 400 deg F/200 deg Celsius.
2. Grease muffin pan/line with muffin cups.
3. Mix flour, salt and baking powder together.
4. In a separate bowl, beat the egg and then beat in cottage cheese. Stir in vegetable oil and honey. Mix well.
5. Add wet ingredients into dry ingredients. Mix lightly with a fork. Do not overmix; batter should still be lumpy.
6. Pour batter into muffin cups.
7. Sprinkle some sugar onto the tops of the unbaked muffins.
8. Bake for 15-20 minutes, or until knife to the center comes out clean, or until golden brown.
9. Remove from oven immediately and place on wire rack.
10. Immediately sprinkle some sugar onto the tops of the muffins and allow to rest for 5-10 minutes.
11. Note: The muffins themselves are not very sweet, so the sugar should be added according to how sweet you like your food.
