I came up with this becuase my husband doesn't like mayonaise and I love cole slaw. The white balsamic vinegar really is the best for this. I have tried many others. The vinegar makes the feta creamy. Sometimes I add red cabbage for color.
Ingredients:
3 cup(s) green cabbage, shredded
2 cup(s) shredded carrots
4 tbsp olive oil
3 tbsp white balsamic vinegar
1 cup(s) reduced-fat feta cheese
1 tsp kosher salt
1 tsp black pepper
2 tbsp chopped green onions
Directions:
1. Combine Cabbage, carrots, chives (or green onions) and feta cheese in a bowl.
2. In a seperate bowl combine olive oil, white balsamic vinegar, salt and pepper.
3. Pour over vegtables and toss. Serve.
