Healthy Cilantro Lime Vinaigrette Dressing

This is a recipe from Phoenix Home and Gardens Magazine . I like to make it once in a while for a green salad - it's delicious, healthy and so simple to make. Zest the lime a little if you want extra flavor. Adjust the cilantro to your tastes.
Ingredients:
1 -2 cloves peeled garlic
1 tablespoon diced shallot
1 lime, juice of
1/2 cup rice wine vinegar
1 -2 teaspoon honey
1/3 cup grapeseed oil
1 teaspoon kosher salt
black pepper
3 tablespoons chopped fresh cilantro
Directions:
1. Place all EXCEPT cilantro in a blender and blend until smooth.
2. Stir in the chopped cilantro and serve over a fresh salad.
