Healthy Carrot Soup

A delicious vegan vegetarian low fat carrot soup.
Ingredients:
2 lbs carrots, chopped
2 lbs onions, chopped
1 bulb of garlic, cloves peeled
4 sticks celery, chopped
1 -2 red sweet pepper, roasted, skinned and de-seeded
12 cups vegetable stock, well seasoned
2 bay leaves
Directions:
1. Place all ingredients into a large soup kettle. Cover and bring to a boil over high heat, then turn down the heat and simmer until all the vegetables are soft, usually about 30 minutes.
2. Puree, using whatever method is most convenient for you ( I use an immersion blender).
3. Check and adjust seasoning.
4. Serve, garnished with your choice of croutons, a swirl of sour cream or yogurt, chopped parsley or cilantro, or whatever else takes your fancy.
