Healthy but Yummy Apple Bread

I have recently had to change my whole lifestyle of eating to a low fat, low sugar and more fresh, healthy way of eating. It's hard to find recipes to fit that so I search recipes on here and adapt them by trial and error. I have 9 apple trees in my yard so am desperate for apple recipes and adapted this one...turned out yummy!!! Sweet and not overly dense, even the kiddo's love it!
Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
4 egg whites
1 1/2 cups splenda sugar substitute
1 cup unsweetened applesauce
1/2 tablespoon vanilla
4 -5 apples, diced (crisper like granny smiths are better)
Directions:
1. mix all dry ingredients together and set aside, in another bowl mix the eggs, splenda, applesauce and vanilla together. Stir in the dry ingredients and gently fold in the diced apples. Bake for approximately 1 hour at 350 degrees. (cooking time will depend on pan size you are using, I typically use 6-8 med loaf pans).
