I made this breakfast up one morning. It doesnt take long yet provides good carbs, protein, and good start in the morning! And does not requre any unhealthy meat like bacon or sausage.. although if you are a fan of such thing just add it on the side! Read more !
Ingredients:
8 whole wheat tortillas
1 tbsp smart balance or olive oil
10 mushrooms (sliced)
4 eggs
1 cup red kidney beans
1/2 cup cheddar cheese (shredded)
1 avocado (cut in cubes)
salt and pepp er to taste
Directions:
1. Put Smart Balance and sliced mushrooms in the skillet on medium heat. let them cook for 2-3 minutes until they start to brown alittle.
2. Add eggs and stir it all together.
3. Add beans and season well.
4. Spoon the mixture on tortillas. Not too much, so the mixture can be wrapped in a tortilla.
5. Sprinkle with cheddar cheese.
6. Add cubes of avocado on each.
7. Wrap and use toothpicks to hold together.
8. You can serve with some sour cream on the side but they truly are delicious just like that! Enjoy!
