Healthy Breakfast Slice Bars

These bars are great for breakfast on the run or a healthy snack. Try your own combinations of dried fruit and nuts to suit your taste.
Ingredients:
3 large eggs
1 teaspoon vanilla extract
2 tablespoons honey
2 tablespoons coconut oil
1 banana
2 carrots
2 apples
1 1/2 cups weet-bix
1 cup oats
1/2 cup shredded coconut
1/2 cup black currants
1/2 cup macadamias
1/2 cup almond meal
Directions:
1. Preheat fan forced oven to 180 degrees Celcius.
2. Line a 20 x 30 cm tray with baking paper.
3. Beat eggs, add honey, vanilla and coconut oil.
4. Mash bananas and add to mixture.
5. Grate carrots and apples and add to mixture.
6. Crush Weet-Bix and add to mixture.
7. Add rest of dry ingredients.
8. Combine with your hands and press into prepared tray.
9. Bake for 20-25 minutes.
10. Allow to cool slightly in tin.
11. Slice into 12 breakfast portions or 18 snack portions.
