A good moist healthy bran muffin recipe; replace the apples with mashed bananas or other fruit if you like.
Ingredients:
1 egg
1 cup milk
2 tbsp butter, melted
1 cup wheat bran
1/2 cup flour
1/2 cup whole wheat flour
1/4 cup brown sugar
1/2 tsp cinnamon
1/4 tsp salt
1 tbsp baking powder
2 med apples, peeled and diced
Directions:
1. sift dry ingredients. then combine with liquid ingredients. bake in greased muffin tins at 400 degrees until firm.
