I actually use 1 can of Eden Organic Black Soybeans & 1 can Aduki beans but the recipe analyzer won't accept the black soybeans. I also prefer canned toms w/mild green chilis for a little more flavor.
Ingredients:
30 oz (eden foods) aduki beans, organic
15 oz (eden foods) navy beans, organic
15 oz chili beans, organic
14 1/2 oz diced tomatoes
1 yellow pepper
1 red pepper
2 cucumbers
1/2 medium onion
2 cloves garlic
1/4 cup fresh basil
1/4 cup dijon mustard
2 t balsamic vinegar
1/4 cup olive oil
2 t brown sugar
1 salt and pepper
Directions:
1. Rinse beans.
2. Chop peppers, cukes, onion etc. Add to beans.
3. Also add canned tomatoes w/green chilis.
4. For vinaigrette: mix garlic, mustard, vinegar, olive oil, brown sugar, salt and pepper - then add to beans and vegs. Mix.
5. Stays well in fridge for a couple of days. Is great for side salad, also excellent with chopped, cooked chicken breast added for full meal.
