Healthy Applesauce Carrot Cake

Ingredients:

Directions:

  1. Mix sugar with dry ingredients.
  2. Mix liquid ingredients, including applesauce. Combine. Fold in grated carrot.
  3. Bake in 9 x9 or 7 x11 pan sprayed with non-stick cooking spray at 350 degrees for 25 to 30 minutes.
  4. Cut in squares. Serve warm with fat free vanilla ice cream or ice with your favorite frosting (cream cheese for me!).
