apple cranberry waldorf salad |
1 1/2 cups chopped cranberries |
1 cup chopped red apple |
1 cup chopped green or yellow apple |
1 cup chopped celery |
1 cup seedless green grapes, halved |
1/2 cup seedless red grapes, halved |
1/4 cup chopped walnuts |
1/3 cup raisins |
2 tablespoons sugar (or sweetener) |
1/4 teaspoon ground cinnamon |
1 (8-ounce) carton vanilla low-fat yogurt |
frosted cranberries (optional) |
fresh mint leaves (optional) |
lettuce leaves (optional) |
combine first 11 ingredients; toss to coat. cover and chill 2 hours. stir just before serving. garnish with frosted cranberries and mint leaves, serve on lettuce if desired. |
