Flax, yogurt, AND lots of bananas! Super moist and fluffy
Ingredients:
4 1/2 cups mashed bananas
1 cup low-fat vanilla yogurt
1 cup butter
8 egg whites
2 egg yolks
1 1/2 cups sugar
1 1/2 cups brown sugar
4 1/2 cups flour
3/4 cup ground flax seeds
3 1/4 teaspoons baking soda
3/4 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon allspice
Directions:
1. Mix first four ingredients and whip on high speed until slightly fluffy.
2. Add dry ingredients and blend.
3. Bake 350. About 35 minutes for mini-loaf.
