Healthier Meatloaf

I love meat, but it isn't very healthy. I have almost doubled this recipe, but by adding veggies, which in turn reduces the fat content per serving.
Ingredients:
1 lb ground beef
12 ounces mushrooms
2 carrots
2 stalks celery
1 beef bouillon cube
1/2 cup water
1 egg
1 cup oats
1/2 teaspoon salt
1/2 teaspoon browning sauce
Directions:
1. place all vegetables into a food chopper and chop them down to very fine pieces. Place boullion cube and water in a small bowl and microwave for one minute, or until cube is disolved. Mix all ingredients together in a large bowl-turn into a loaf pan greased with cooking spray. Bake at 350 degrees for 30 to 45 minutes, to desired doneness. I have also made this into patties and fried them in a pan with a quick spray of cooking spray. I might try the George Forman Grill one of these days also, not sure if it will work or not.
