Taking a classic lasagna recipe and making it healthier by using lean ground turkey instead of ground beef; cottage cheese instead of ricotta; and spinach for extra vitamins and minerals. Ingredients:
1 cooking spray
1 pound lean ground turkey (97% fat free)
1 1/2 cups chopped onion
2 garlic cloves, chopped
52 ounce (low-fat) marinara sauce
16 ounce low-fat cottage cheese
1/4 cup egg whites
1 oz (1 bunch) parsley, chopped, check weight
2 oz fresh grated parmesan cheese
10 ounce frozen chopped spinach, thawed and drained
1 box oven-ready lasagna noodles
8 oz shredded mozzarella cheese
Directions:
1. Calories: 352

7. Preheat oven to 350 degrees.
8. Coat a large skillet with cooking spray and place over medium-high heat. Add turkey, onion and garlic; cook until meat is browned, stirring to crumble. Add 6 cups marinara sauce; stirring and cooking for 5 minutes. Remove from heat.
9. Combine cottage cheese, egg whites, Parmesan, parsley, salt & pepper to taste and spinach. Stir to combine.
10. Spread marinara sauce in bottom of a 13 x 9 inch baking dish coated with cooking spray. Arrange four noodles over marinara; top with cottage cheese mixture and half of the mozzarella. Spoon half of the turkey mixture over the mozzarella. Arrange four noodles over turkey mixture. Top with remaining turkey mixture and mozzarella.
11. Bake for 50 minutes or until cheese melts and sauce is bubbly. Let stand 10 minutes before serving.
