You can make it with or without the brown sugar cinnamon on top, I like the additional sugar for my taste. Deleting the last 2 ingredients brings the nutrition grade to a 'B'. I make these for my once-a-month cooking, wrap individually in foil and freeze in sets of 5. Just take out and let dethaw. You can also heat a little before eating if prefered.
Ingredients:
2 cups whole wheat flour
2 teaspoons baking powder
1 cup wheat germ
1/2 teaspoon salt
3/4 cup land o lakes spreadable lite canola oil butter
1/2 cup molasses
1 cup pumpkin
1/4 cup brown sugar
1/4 cup sugar
4 eggs
1 cup uncooked oatmeal
1 cup raisins
1/4 cup brown sugar (optional)
1 tsp cinnamon (optional)
Directions:
1. Mix flour, baking powder, wheat germ and salt.
2. Mix butter, pumpkin and molasses in separate dish.
3. Add sugars to wet mixture and blend.
4. Mix dry and wet ingredients together.
5. Add one egg at a time and mix thoroughly.
6. Add oatmeal and raisins and blend in.
7. Spray (2) 9x13 baking dishes with nonstick spray.
8. Layer 1/2 of mixture in bottom of each.
9. Mix additional brown sugar and cinnamon and sprinkle over if desired.
10. Bake at 350 for 30 minutes.
