This uses Orange Puree (a mixture of carrots and sweet potatoes) to boost the nutrition of traditional French Toast. Since the puree has a mildly sweet flavor, this actually yields a slightly sweeter French Toast than normal. This is adapted from the awesome book the sneaky chef which focuses on adding nutrition to everyday recipes for kids and other picky eaters. If you don't have time to make your own pureed carrots and sweet potatoes, use jarred baby food.
Ingredients:
2 eggs
1/2 cup milk
1 tablespoon maple syrup or 1 tablespoon honey
1 teaspoon cinnamon
1 teaspoon vanilla extract
4 slices bread (whole grain preferably)
oil
powdered sugar
pureed carrot, and
sweet potato
Directions:
1. Combine eggs, milk, orange puree, maple syrup or honey, cinnamon, and vanilla in a large shallow dish.
2. Dip bread until soaked on both sides.
3. Cook in skillet over medium heat. Use a small amount of oil (or butter) to keep the toast from sticking. Allow the first side to brown, then flip to brown the second side of the bread.
4. Dust with powdered sugar or top with your favorite syrup.
