I don't think any cookies really count as healthy, but these whole-grain, reduced-fat, reduced-sugar cookies are about as close as you can get. Not only that, they're chewy and delicious!
Ingredients:
6 tablespoons unsalted butter
1/2 cup dark brown sugar
1/4 cup splenda granular or 1/4 cup white sugar
1 1/2 cups rolled oats
1/3 cup all-purpose flour
1/3 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup chocolate chips
Directions:
1. Put the butter in a small, microwave-safe mixing bowl and heat in the microwave until just melted (about 45 seconds).
2. Add the sugar and sucralose to the melted butter and stir until well-combined.
3. Beat the egg with the vanilla and add to the butter-sugar mix. Stir until combined.
4. In a large mixing bowl, combine the flours, oats, baking soda and salt. Add the liquid mixture and mix well.
5. Fold in the chocolate chips.
6. Wrap the cookie dough in plastic and chill in the refrigerator for at least 30 minutes. (You can skip this step, but the cookies will be flatter.).
7. While the dough is chilling, preheat the oven to 350ยบ F and lightly grease a cookie sheet or cover it with parchment.
8. Remove the dough from the refrigerator. Break off tablespoon-sized pieces, roll them into balls, and place them on the cookie sheet, leaving about 2 inches in-between.
9. Bake for 12-15 minutes, until cookies have just set up.
