Health Nut Zucchini Bread

Oil Free Zucchini Bread. Hopefully I'll find a way to make it low-sugar/ sugar-free!
Ingredients:
3 eggs
1 1/2 cups white sugar
1/2 cup brown sugar
1 cup unsweetened applesauce
1 teaspoon vanilla
2 cups raw shredded zucchini
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup slivered almonds
1/2 cup grated carrot
Directions:
1. Beat eggs, add sugars. Add remaining ingredients. Blend well. Bake in greased loaf pan for 1 hour at 325 degrees.
