A recipe from my friend Janette-it's really good!
Ingredients:
3/4 cup coconut, dried shredded unsweetened
3/4 cup raw sugar
1 cup bran cereal
250 g dried apricots, chopped
1/2 cup pumpkin seeds
1/2 cup self raising flour
3/4 cup rolled oats
1 1/2 cups skim milk
Directions:
1. Preheat oven to moderate 180c.
2. Grease loaf tin.
3. Combine all ingredients mixing well.
4. Bake for about one hour then test in five minute intervals until a skewer inserted into the loaf comes out clean.
5. Remove from tin and cool on a wire rack.
6. Serve buttered if you like.
